Raspberry Chocolate Energy Bites

Energy bites make for the perfect healthy snack because they are a great balance of protein, carbs, healthy fats, and they are high in fiber. These are also easily portable, so they make for great lunchbox snacks, work snacks, or just small afternoon treats.

When choosing ingredients for these energy bites, we always want organic. Buying organic oats can help you decrease the amount of pesticide spray - glyphosate - which is commonly used by wheat farmers. This pesticide is linked to the increase risk of cancer, endocrine disruption, celiac disease, autism in children, and leaky gut syndrome. One brand that we LOVE here is called One Degree Organic Foods, they are a family farm that is transparent about how they grow their crops and certified glyphosate free! You can usually find these oats are your local health food store and even now in a bulk bag at Costco.

You could also choose to use fresh raspberries instead of frozen, but I love the bright pink hue color that the frozen raspberries bring to these bites, which are perfect for any celebration.

Raspberry Chocolate Energy Bites

These raspberry chocolate energy bites make the perfect, on-the-go, healthy snack! Made with frozen organic raspberries, juicy dates, coconut flakes, and dairy-free chocolate chips, they are a great item for lunch boxes, work snacks, or a sweet afternoon treat. Energy bites make for a great combination of protein, healthy fats, carbs and fiber.

Equipment

  • 1 Food processor or high-speed blender

Ingredients  

  • 1 1/2 cups Organic gluten-free rolled oats
  • 1 1/2 cups Shredded organic coconut flakes
  • 2 cups Frozen organic raspberries
  • 20 Organic deglet noor pitted dates
  • 2 tbspn Organic chia seeds
  • 1 tsp Alcohol free vanilla extract
  • 1/2 cup Dairy-free organic chocolate chips

Instructions 

  • Place all ingredients except for the chocolate chips into a food processor or high speed blender and mix on high. You may need to stop periodically throughout the blend to scrape down your sides. Keep blending until the mixture starts to stick together.
  • Next, add in your chocolate chips and pulse slowly until bits are chopped but mixed in thoroughly. Carefully remove blade and scrape remaining bits back into the dough.
  • Pinch dough together forming 1 inch balls. Continue until all of the bites are formed. May drizzle with extra melted chocolate chips and top with dried rose petals for an extra special treat.
  • Chill bites in refrigerator until you are ready to eat. Enjoy!
